Amazing Beefy Nachos!
This is a super simple, hearty and loved recipe in our family. I served this to my son's college group a week ago and they rated it 10/10! This is also a pretty versatile recipe. You can add toppings or keep it simple. This can be main course or a snack. My kids go crazy over this recipe and ask for it often. It also easy for them to make so that's a win for me! You can also make this a MAN'S dish or lighter and still equally as delicious dish. Delicious dish. Say that 5 times fast. Delicious dish, delicious dish, delicious dish...ya, that's as far as I got. I ended up with duck lips.

- 1 tbsp oil - I use avocado or coconut
- 2 lbs Ground beef/turkey
- 1 jar Salsa I use Kirkland brand or Pace
- 4 cups cheese
- 8 oz Cream cheese optional
- 1 cup Sour cream optional
- 1 can Refried beans optional
- 1 bag tortilla chips
- 3 avocados Option - but so good either diced/sliced or make guac and add it on top! YUMMOS!
Heat oil in large pan.
Crumble ground beef or turkey into pan. Cook at medium heat until no longer pink.
Add entire jar of salsa. Mix into meat.
Mix in cheese until melted.
Here you are free to add in cream cheese, sour cream, and/or refried beans. None of these are necessary. They just add volume and flavor. If you don't add sour cream though, feel free to use it as a topping
Once everything is mixed together and melted. Serve over tortilla chips. Then add whatever topping you might have on hand. More cheese, sour cream, chopped cilantro or green onions, etc.
