So we recently found out that my husband an autoimmune disease. Along with a few supplements, he was ordered to go on the Paleo diet. I had a feeling that was coming. We really had no idea that he had an autoimmune disease, but with the symptoms he had been experiencing for quite some time, I felt that the Paleo diet was going to be best for him. When the doctor confirmed this, I sprung into action. I had been making Paleo approved foods for awhile, but we were never 100% Paleo. It can be very overwhelming and intimidating to begin. Especially if you have a picky kid in the mix! We made the crazy decision to involve our whole family in this change. Our two oldest are ok with this decision. Our 10 year old cried. He literally
went ran to his room…crying. Ugh! No more pizza, no more mac n cheese, no more soda, no more, no more, no more! Honestly, I still plan to do non-Paleo treats once in a while and when they are somewhere else (party, friend’s house, etc.) they can eat what they want. My husband needs to do it for health reasons and as I am getting ready to get a bunch of testing done for myself, I have a feeling it will be best for me too.
Soooo….I am going to write a bunch of posts on our Paleo journey. I will present them as challenges because it IS a challenge to change your way of eating. The first challenge for me is doing it within our normal budget. I believe that it CAN be done! Another challenge will be 2.) Kid friendly/approved 3.)EASY to make! (I am too busy to spend HOURS in the kitchen!) 4.) Fun food (i.e family night food, party food, etc.)

The Well Fed cookbooks contain a whole cooking round-up or food prep section that is incredibly helpful. The author even includes about how many pounds of protein, veggies, etc. to plan on for each person!
The author of Nom Nom Paleo was able to successfully transition her young children to the Paleo diet. She has some great recipes!
