"Look!  It's a Tookie! No...it's a cookie! No...it's a MUFFIN!!!!"  

My little guy calls these "tookies".  Actually, he thinks they are cookies.  He calls cookies "tookies". He thinks these are cookies.  But...they are actually grain free, dairy free, sweetener free muffins!  Someday he'll call them muffins.  But for now..."tookies" is just too cute!  Let me be clear here though.  These are not your typical fluffy muffins.  These are more egg muffins.  They have more of an eggy consistency.  This is the only way that I can get my little guy to eat eggs!  We love regular egg muffins around here but he won't eat them, so I got the idea to disguise them as regular muffins.  This really is a great toddler food!  You can make these as nutritious as you want.  In fact, I'm developing a bunch of variations right now.  Next up will be pumpkin spice I think.  Because, why not?  Fall is coming!

  • 1 Ripe Banana
  • 2 Eggs
  • 1 Tbsp Coconut flour
  • 15-18 blueberries


  1. Heat oven to 375 degrees.

  2. Fully mash banana.  Then mix in the eggs.

  3. Mix in the coconut flour.  

  4. Line a muffin pan with 6 liners.  I use parchment liners but you could use silicone cups or just grease the pan.

  5. Use a 1/4 cup to scoop out the batter.  This will fill 5-7 muffin cups.  It all depends on the size of your bananas and your eggs.  

  6. Place 3 blueberries in each cup.  You could put more, but remember that blueberries get really hot!  Plus, I think 3 just looks nice!

  7. Place pan into heated oven for about 10 minutes.  The muffins should look kind of dry and a knife inserted will come out clean.  If there is still a "foam" on top, then leave them in for another minute, but keep a close eye on them!

Recipe Notes

This recipe will make between 5 and 7 tookies.  It all depends on the size of your bananas and your eggs!
